14th World Oyster Festival [Extended to 31 August]

1 July - 31 August

GFM’s Largest Oyster Celebration Continues

Oyster season isn’t over just yet.

Good news for fellow oyster lovers — we’ve decided to keep the 14th World Oyster Festival going until 31 August 2026.

Why? Because many of our partner oyster farms are still harvesting at the peak of their season.

Rather than chasing a fixed lineup, we work closely with our farmers each week to fly in whichever oysters are tasting their very best. As the season evolves, so will our selection — ensuring only the freshest live-imported oysters make the journey from farm to table.

Continue exploring a rotating selection of live-imported oysters from up to 9 countries, freshly shucked to order and served side by side, so you can experience just how different one oyster can be from another.

* Seasonal varieties subject to availability. Oysters are imported in limited quantities and some varieties may sell out daily. Book early for the best selection.

* Please note: Oyster Tuesdays are not valid in conjunction with the 14th World Oyster Festival.

What’s New This Year

Debut of 3 French Oysters

We’re proud to introduce 3 new French oysters making their festival debut from one of Europe’s most renowned oyster regions in Marennes–Oléron, France.

Taste the World in One Sitting

This year’s festival brings together 25 oyster varieties from 9 countries:

  • France & Netherlands — bright, mineral-driven classics
  • Canada — plump, meaty favourites
  • Australia & New Zealand — crisp, briny freshness
  • Pacific regions — creamy, smooth finish profiles

Every oyster reflects its merroir — the unique environment where it was grown.

View 2026’s Oyster Map for tasting notes, origins and pricing:

Always Fresh, Always Live

All oysters are imported live and kept alive until service.

No pre-shucking. No shortcuts.

“Even oysters grown just kilometres apart can taste completely different. That’s what makes this festival so exciting.”
— Alan Lee, Chef-Owner

Had a wonderful dinner at Greenwood Fish Market! The ambience was delightful, and the food was fantastic across the board—from the super fresh, delicious oysters and flavor-packed beef tortilla chips to a fantastic apple crumble to wrap up the meal. A special shoutout to Ivy, Kumar, Madhu, and Keethi for their exceptional and attentive service. They truly made our evening complete!

Went for a solo dinner to sample their range of oysters from around the world. Had five different pairs with a side of truffle fries and two pints of beer. Truffle fries portion was huge; wished they had a smaller size for less. Oysters were fantastic!

I went to Greenwood fish market with my family and dogs! I love that the place is dog friendly, and that the quality of all the food is amazing. We ordered oysters, seafood, such as a whole fish and seafood pasta, and also ice Americano cos their coffee is amazing as well! We also had dessert to end the meal, you must order the apple crumble with ice cream.😃😋

A wonderful new waterfront dining experience in Sentosa for me. Greenwood Fish Market is a high-end seafood restaurant with an impressive selection of oysters from around the world. The black pepper crab was perhaps the best I have ever eaten—and I make a point of ordering it whenever I am in Singapore. The sauce was slightly on the sweet side, but absolutely delicious. Professional service, a relaxed atmosphere and a beautiful waterfront setting made the whole experience memorable. Definitely a place to visit again.

We had such a wonderful dining experience! Mr Madhu gave an excellent introduction to the restaurant and explained the concept behind each station, making the meal feel like a fun food tour rather than just a regular dinner. We enjoyed moving from one station to another, discovering different dishes and watching the chefs prepare the food along the way. One of the highlights was the fresh oysters being shucked right in front of our seats—so fresh, interactive, and enjoyable! Mr Madhu was friendly, knowledgeable, and passionate in his explanations, which made the whole experience even more memorable. A great combination of delicious food, fresh ingredients, and an engaging dining experience. Highly recommended!

Loved the food, we ordered 3 types of oysters (Coromandel, Coffin Bay, Fine de Claire) to try, loved Coromandel the most. Also tried their calamari, clams and crab meat vongole, all were great. I brought my dog so we sat outside, we were served by Erdie, he was very welcoming to my dog and offered water as well. Appreciate his service and kindness!

The real star of our visit to Greenwood Fish Market was the 14th World Oyster Festival, celebrating an impressive 25 varieties of oysters from 9 different countries. It was a fantastic opportunity to sample such a diverse selection, with each oyster on the tasting platter offering its own unique flavour, texture and character. Their freshness was simply exceptional, with every oyster tasting wonderfully clean, briny and vibrant. The oysters were served with a classic mignonette of red wine vinegar and eschallots, adding a bright, tangy acidity that beautifully complemented the oysters’ natural brininess without overpowering their delicate flavours. The chargrilled yellowtail was another highlight (fresh, beautifully charred on the outside, and wonderfully moist and tender inside). The smoky flavours from the grill brought out the fish’s natural sweetness perfectly. Overall, a fantastic seafood experience, with the World Oyster Festival making our visit particularly memorable. For oyster lovers, the sheer variety and freshness made this a standout experience.

Love the seafood here. Not the right timing for oysters. Was informed to come in July where there are more than 20 different types of oysters. Was recommended to eat Mahi Mahi and the fish is tender and juicy. Steak is cooked properly too. Overall good experience and Erdie is very helpful and friendly.
